Spring Driving Safety Tips! |

- Check your brakes. The warning signs that it’s time to replace your brakes are brake noise, grinding, screeching or squealing.
- Check your windshield wipers. Your wiper blades worked hard all winter wiping away dirt from your windshield. Now that spring is approaching replace them to help out with the visibility.
- Clean your car’s interior. It’s time to clean all the garbage and dirt that has been living in the exterior. Be sure to vacuum as well.
- Change your oil for spring. Have your mechanic change your thinner winter oil to a little heavier oil for the pending warm weather.

Irish Bacon And Cabbage Soup
Makes:4 servings / Prep Time: 15 Min / Cook
Time:30 Min / Ready In:45 Min |

Ingredients
1/2 pound Irish bacon, diced
2 large potatoes, peeled and cubed
1 (15 ounce) can diced tomatoes with juice
1 cup chicken stock, or as needed
Salt and black pepper to taste
2 cups thinly sliced dark green Savoy cabbage leaves
|
| Directions:
Place bacon in a large, deep stockpot or saucepan. Cook over medium high heat until evenly brown. Drain off any excess fat.
Stir in potatoes, tomatoes, and enough chicken stock to cover. Season with salt and pepper. Bring to a boil, reduce heat and let simmer for 20 minutes, or until potatoes are tender.
Stir in cabbage and allow the soup to simmer for a few minutes longer before serving.
