Despite common misconception, Cinco de Mayo is not Mexico’s day of independence. Mexico’s official independence day is September 15, 1810 when they broke away from Spain.
On May 5, 1862 France invaded Mexico under the leadership of Napoleon III. France was comprised of an 8,000 person army equipped with the most modern weaponry available. Mexico’s army on the other hand, was made up of only 4,000 soldiers. Although they were greatly outnumbered, Mexico fought hard and celebrated a glorious victory. The battle took place in Puebla, Mexico which is located about 100 miles outside of Mexico City.
Some would argue that this battle is responsible for the endurance of the United States. Why? It delayed Napoleon III from supplying the confederate rebels by an additional year; allowing the United States to become a force to be reckoned with. About a year later, the United States defeated the Confederates at Gettysburg and essentially ended the Civil War.

Mother's Day Pie - A crustless coconut custard pie.
Serves 8

Ingredients
- 1 cup white sugar
- 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 6 tablespoons butter, melted
- 1 teaspoon vanilla extract
- 3 eggs
- 1 (12 fluid ounce) can evaporated milk
- 1 cup shredded coconut
Directions:
- Preheat oven to 325 degrees F (165 degrees C). Generously grease and flour a 9 inch pie plate.
- In a medium bowl, mix together sugar, flour, and salt. Stir in melted butter or margarine and vanilla extract. Add eggs one at a time, mixing well after each addition. Mix in evaporated milk followed by coconut. Pour mixture into pie plate.
- Bake in preheated oven for 35 to 40 minutes. Chill before serving.
