5 Essential Summer Car-Care Tips |
- Kick the tires. Since Summer heat increases tire pressure, get out the tire-pressure gauge and check that your tires are inflated in accordance to your owner's manual. Don't forget to check your spare as well.
- Check the essentials. Check the oil after running the car for a few minutes. Some technicians recommend an oil change every 3,000 miles - check your owner's manual for guidance. Don’t forget new windshield-wiper blades for summer driving.
- Make a service stop. Check with your mechanic if you think it might be time for a tune-up, it could improve your fuel economy.
- Ditch the junk in your trunk. No hip-hop reference here -- just clean out your car. The more you haul, the more fuel you burn.
- Prepare for the worst. You should keep an emergency kit with some necessities as well as a road assistance kit with jumper cables, air compressor, tools, and a first-aid kit. Slow down. Driving faster than 60 miles per hour decreases your fuel efficiency.

Black Bean, Corn, and Tomato Salad with Feta Cheese
Makes:12 servings / Prep Time: 1 Hour / Ready In: 9 Houre |

Ingredients
1 (14 ounce) can black beans, drained and rinsed
2 fresh tomatoes, chopped
1 large green bell pepper, chopped
1 cup fresh sweet white corn, cut from the cob
1 bunch green onions, sliced
1 jicama, peeled and minced
1 fresh jalapeno pepper, minced
1 (8 ounce) package crumbled feta cheese
1 clove garlic
1 pinch sea salt
1/4 cup fresh lime juice
1 teaspoon Dijon mustard
1/4 teaspoon fresh-ground black pepper
1 cup olive oil

Directions:
- Place the beans, tomato, bell pepper, corn, onion, jicama, jalapeno pepper, and feta cheese in a large salad bowl.
- Mash the garlic and salt together with a mortar and pestle. Whisk together the mashed garlic, lime juice, mustard, and pepper in a small bowl. Add the oil in a slow, steady stream while whisking. Continue whisking until smooth. Drizzle the dressing over the salad and toss to coat. Chill overnight.
